Gluten Free Pumpkin Chocolate Chip Muffins

These are so, so good. You should make them...



1-3/4 cup gluten free baking mix (Bisquick has one that works great)
1/2 teaspoons baking powder
1 teaspoon baking soda
3/4 teaspoon salt
3/4 teaspoon nutmeg
1/2 cups canola oil
1-1/3 cup sugar
2 whole eggs
1 can of pureed pumpkin
1/3 cups water
1 teaspoon vanilla
1 package dark chocolate chips

1. Preheat oven to 350 degrees

2. Combine dried ingredients in a large bowl, set aside

3. Cream together oil and sugar until combined - add eggs, pumpkin, water and vanilla. Beat until combined

4. Add flour mixture to wet ingredients and beat until combined. Mix in chocolate chips and nuts

5. Pour into individual muffin liners and bake for 55-60 minutes or until a toothpick inserted in the center of the muffin comes out clean.
